Makhane ki Kheer is a very rich and delicious sweet dish made with roasted fox nuts/makhana and milk.It is super easy to make and needs only a few ingredients.
Heat 2 tablespoons of clarified butter in a heavy bottom pan, add fox nut and roast them on low heat for 5-7 minutes till slightly golden in color.
Cool and pulse gently to make a granulated powder.
Roast chopped nuts in the same wok for 5 minutes and keep aside.
Boil milk with cream in a heavy bottom pan. As it starts boiling add crushed cardamom, saffron strands and ground makhana. Let it cook for few minutes more.
Add sugar and cook it for 10-15 minutes on low heat till it thickens.
Remove from heat and serve warm or chilled.
Notes
I prefer the kheer when served cold, if you'd like to try cold, refrigerate it and serve chilled.
