Wash and soak sago pearls in enough water just to cover for 3-4 hours or overnight. Wash again under running water till clear water appears. Blitz the roasted peanuts and grind to make them slightly crushed.
Take drained sago in a bowl, add peanuts, green chili, ginger, salt, cumin seeds, coriander powder, garam masala, red chilly powder, lemon juice, coriander leaves.
Add mashed potatoes and mix all the ingredients. Make small patties of equal size.
Heat oil in a wok on medium-high and deep fry the patties from both sides till crispy and golden.
Drain on the paper towel and serve warm with mint chutney.

Adjust the amount of chilli as per your taste.
You may shallow fry the vadas as well.
Make sure the oil is hot otherwise the vadas might open in the oil.
