Ingredients
For Ladoo

besan/gram flour
3/4
cup
water
oil or ghee for frying
For Sugar Syrup
1
cup
sugar
1/2
cup
water
1/4
teaspoon
cardamom powder
a pinch saffron strands or yellow/orange food color
a pinch citric acid
Instructions
For Boondi
In a mixing bowl add besan and water.Whisk until combined and a smooth batter is formed.
Heat oil or ghee in a wok. Use a slotted spoon (motichoor jhara) and place it over the wok.
When the oil is hot enough pour a ladlefuln batter at a time over the slotted ladle, stirring and tap it over the kadai.
Remove from oil ,drain on pstrainer with abowl beneath to remove extra ghee.
For Syrup
In a saucepan add sugar,food color, cardamom and water.Boil and then cook on simmer for 5-7 minutes.
Set the syrup aside.
Make Ladoo
Add the fried moti/boondi in sugar syrup and start cooking on simmer for 2-3 minutes.
Add melon seeds .Apply a little oil or ghee on your palms and make ladoos while the mixture is warm.
Cool and store in air tight container.

Notes
The batter should be of pouring consistency.
Make sure the sugar syrup is one thread consistency
Do not over fry the boondis , just for a 30 sec. Adjust the sugar as per your taste.
You may add additional flavorings like black pepper, saffron, cardamom or kewra essence.
