mustard seeds
a pinch aseftida
few curry leaves

green chillies,
chopped

cashew nuts

tablespoon
ghee,
oil for vegan option
salt to taste
Instructions
Heat oil in a pan and add chana dal and urad dal. Roast on low to medium heay until slightly brown.
Add dried red chilli, cumin, mustard, curry leaves and asafetida. Saute until seeds crackle.
Stir in green chillis and cashew nuts and cook on low heat until cashews are golden.
Now add the semolina and cook on low heat for about 5-7 minutes. Add salt and mix well, remove from heat.
Let the mix cool for few hours and then store in airtight jars or ziplock bags and keep on room temperature for few days or refrigerated for a month.
To make Instant Upma
Boil two cups of water for a cup of upma and add the instant upma mix in the boiling water.
Stir and cook for a minute. Serve immediately.
Notes
Adjust the chillies as per your taste.
You can add citric acid or some other preservative to make it stay fresh for longer times.
