Moong Dal Dosa with Scrambled Tofu

For Filling

tofu
scrambled
1
onion
chopped

cherry tomatoes halved

teaspoon
ginger paste

teaspoon
green chilly
choped

teaspoon
turmeric powder
1
teaspoon
garam masala powder
salt to taste

olive oil
For Dosa:
2
cups
washed and split green gram/dhuli moong dal
water as required
1
teaspoon
pepper powder
1
teaspoon
green chilli
finely chopped
salt to taste
oil as required
Instructions
Soak moong dal in water for about 2 hours or overnight and grind to a smooth paste using just enough water to grind.
Add pepper, chilli, salt and make dosa like batter from moong dal.
For filling
Heat oil in a pan and add ginger, green chilli and onions, saute for few minutes.
Add in cherry tomatoes, turmeric, salt, and garam masala.
Stir and add scrambled tofu and cook for few minutes. Remove from heat and add coriander leaves.
Making Dosa
On a nonstick pan spread dal batter and add oil from both sides.
Roast on both sides, when done spread the filling over the top and roll.
Remove from heat and serve hot with tomato coconut chutney.
Notes
Adjust spices and salt as per you
Don't make the batter too thick or thin.
