buckwheat groats

cherry tomatoes,
halved

cup
cucumber,
sliced
1/4

mint + coriander leaves,
chopped
1/4
cup
scallion greens,
chopped
For dressing
1
tablespoon
za'atar spice
1
teaspoon
peppercorn,
crushed
1
tablespoon
olive oil,
extra virgin
1
tablespoon
chia seeds
1
tablespoon
lemon juice
salt to taste
Instructions
Wash and soak buckwheat groats in enough water for 6-8 hours or overnight.
In a saucepan add 3 cups of water and salt. Bring it to boil and add the drained buckwheat groats.
Cook covered for about 15 to 20 minutes or until buckwheat groats are done.
Once cooked transfer the buckwheat groats in a mixing bowl. Add tomato, cucumber, mint, coriander, scallion greens.
Make dressing
In a small mixing bowl add all the ingredients for dressing. Keep aside.
Assembling
Add the dressing to the salad right before serving. Toss well and serve.
Notes
Adjust the seasonings as per your taste.
