Cook pasta according to package instructions or until al dente. Drain and set aside.
Heat olive oil in a pan and add garlic and onios. Saute for a minute and add tomatoes, and the rest of the vegetables.
Stir and add oregano, basil, parsley, salt, pepper, and chilly flakes and cook for 5-7 minutes or until tomatoes are soft.
Meanwhile preheat oven to 200° degree and brush a square baking tray with oil.
Now add the cooked pasta, the tomato veggie sauce in alternate layers in the baking tray. Top it with layers of cheese, some more seasoning if desired.
Bake in preheated oven for about 20 minutes. Remove from oven and serve warm.
Notes
To make the pasta quicker keep the vegetables chopped already.
Keep the pasta pre-cooked and store in the refrigerator.
Adjust the spices as per your taste.
