The classic rava upma with loads of vegetables is just perfect to start your day. This is one of the healthy and delicious breakfast that you don't want to miss.
Heat a pan or skillet and add semolina and dry roast for 5-7 minutes on low medium heat.
Heat olive oil / ghee in a pan and add asafetida, mustard seeds, cumin seeds, curry leaves, urad dal and dry red chillies. Stir for a minute until the seeds start crackling.
Add turmeric powder, cashew nuts, and chopped onions along with green chillies and cook until onions are slightly golden.
Now add the chopped vegetables, stir in and add salt and 3 cups of water. Let the water start boiling.
Once water is boiled for 5 minutes, add semolina. Stir and cook on low heat until Upma starts thickening.
Add ghee, and stir for 2 minutes more. Remove from heat and serve hot.
Notes
Try using coarse rava to make the Upma taste better.
Upma tastes amazing when served with dollop of ghee.
