sichuan peppers
1
bay leave

shallots,
chopped

bok choy,
chopped

baby corn,
chopped
salt to taste

teaspoon
vinegar
1
teaspoon
soy sauce,
low sodium
red chilly flakes to taste
pepper to taste

ramen noodles
Instructions
Heat olive oil in a pan and add Sichuan peppers and bay leave.
Stir in garlic and shallots and saute for few minutes.
Add bok choy and baby corn, stir and add salt, vinegar, soy sauce, pepper and chilly flakes.
Stir and cook for 5 minutes. After 5 minutes add water and let it boil.
Once water starts boiling add ramen noodles and cook for 5-7 minutes more. Remove the bay leave.
Season with more salt and chilly flakes, add some more bok choy if desired.
Serve and enjoy.

You may use veg broth instead of water in the soup.
Adjust spices as per your taste.
