soya granules/minced soya

chopped

pureed

onion,
chopped

garlic cloves,
minced

celery stalk,
finely chopped

carrot,
chopped

red bell pepper,
chopped
salt to taste

teaspoon
ground oregano

teaspoon
ground basil

extra virgin oil

cooked pasta of your choice
Instructions
Heat olive oil in a pan and add garlic, onions, and celery. Saute for few minutes.
Stir in soya mince, salt, oregano, basil, and pepper. Cook for 2 minutes.
Add carrots and red bell pepper, stir and add chopped tomatoes and tomato puree.
Cook on simmer for about 15 minutes. Remove from heat and serve on top of cooked pasta.
Notes
Adjust the seasonings as per your taste preferences.
You may add more or fewer vegetables like zucchini, mushrooms, and aubergine.
