ginger

a pinch aseftida

oil
few coriander leaves
Spice mix

teaspoon
cumin powder
1
teaspoon
garam masala
1
teaspoon
red chilli powder
1/2
teaspoon
turmeric powder

teaspoon
coriander powder
salt to taste
Instructions
Mix the spice powders and salt.
Wash and pat dry the eggplants .Make a cross slits lengthwise.Fill a teaspoon of filling from both the openings .
Heat oil in a wok. Add aseftida and ginger. Saute for a minute.
Now add onions and cook them untilsoft.Add tomatoes and chillies.Cook till tomatoes are done.
Stir and add stuffed eggplants.
Cook covered for 20 minutes, stir occasionally or until eggplants are done.
Garnish with chopped coriander leaves and serve hot with roti or paratha.
