Ingredients

all purpose flour

cup
wheat flour
1/2
cup
sugar
1/4
cup
ghee
1
teaspoon
cardamom powder
1/2
cup
oil
Instructions
In a mixing bowl add flours, sugar, ghee and cardamom powder. Mix well until it resembles breadcrumbs.
Knead a smooth dough using enough water and let the dough rest for 20 minutes.
Divide the dough into two equal parts. Roll out one part into a round disc and cut out a diamond or square shapes.
Heat oil in a wok and deep fry the shankarpali in batches until golden in colour.
Remove the fried snack on paper towel. Cool and store in air tight container.
Notes
It stays fresh for a couple of days in an air tight at room temperature.
