Carrot Halwa is a favorite dessert of winters, made with freshly grated carrots, milk and dried fruits. Carrot halwa is quite popular in India and often served as aa dessert in marriages and parties.
Take a heavy bottom pan or open mouth kadhai and add grated carrots in it. Start cooking it on low flame.
After a few minutes add milk to it.
Let it cook till milk and water from carrots evaporate. Frequent stirring is required. (it will take around 45 minutes).
When all water evaporates add sugar to it. Now sugar will leave the water. Cook till the water from sugar evaporates.
Make a hole in the center of the pan with a spoon, add clarified butter into this. Add cardamom and chopped or whole nuts in it. Stir and mix the ghee with halwa.
Add heavy cream and cook for another 5-7 minutes or until the separates from the halwa.
Remove from heat, garnish with some more nuts.
Serve hot after dinner or lunch. Store in refrigerator.
Notes
Make sure to keep the heat on low medium as the carrots might stick to the bottom of the pan.
Use a heavy bottom pan to avoid sticking.
Stir the halwa frequently
Adjust the amount of sugar as per your desired sweetness.
If using khoya, cook the carrots until the water evaporates. Then add khoya and ghee and nuts. Cook till ghee separates from the halwa.
