A quick and tasty Israeli salad made with few simple ingredients and dressed in lemon juice and olive oil.

Ingredients

persian or english cucumber,
chopped

red onion,
chopped

ripe plum tomatoes,
chopped

cup
parsley leaves,
chopped (I did not use)

ripe avocado,
chopped (optional)
juice of one lemon
salt to taste
peppercorn to taste

tablespoon
olive oil,
extra virgin
Instructions
In a mixing bowl add all the vegetables.
Stir in salt, pepper and lemon juice. Give a nice gentle toss.
Drizzle in olive oil and mix well.
Serve and enjoy.
Notes
You may also add olives and jalapenos to make the salad extra zingy.
