For Icing

icing sugar

cream of tartar/lemon juice

Instructions
Preheat oven to 180 ° C and line two baking tray with parchmet paper.
In a mixing bowl add flour, spices, salt, and baking soda. Mix well and set aside.
In another mixing bowl, cream together coconut oil and sugar until light and fluffy.
Add in molasses, vanilla, and almond milk. Mix well.
Now add the flour mixture in batches. Knead a dough.
Divide the dough into two discs and cling wrap them. Chill the dough discs for about 2-3 hours or overnight.
Once chilled, take the dough discs on a floured board. Use a flour-dusted rolling pin and roll a 1/8" sheet.
Cut gingerbread cookies using cookie butter.#Arrange them on a parchment paper-lined baking tray.
Bake in a preheated oven for bout 8-10 minutes or until done.
Cool the cookies completely before icing.
For Icing
In a mixing bowl add icing sugar and cream of tartar. Now add water, one tablespoon at a time, and make a smooth paste.
Transfer the paste into a piping bag.
Decorate the cookies as per your preferences.
