Ingredients

icing sugar

ghee
you can use butter

all-purpose flour
1/2
cup
almond meal
1/2
tsp
cinnamon
orange zest
1/4
cup
milk
Instructions
In a mixing bowl beat ghee and sugar until light and fluffy pale in color.
Add almond meal, flour, cinnamon, and orange zest. Mix well
Add milk and knead a stiff dough.
Cling wrap and refrigerate for 30 minutes.
Remove from refrigerator and roll between two parchment paper.
Cut out the shapes. For one longer cookie, cut out two similar shapes and one small hole in one of the cookies.
Bake in preheated oven for 8-12 minutes or until done.
Cool the cookies a bit. Dust the top layer cookies (the ones with holes) with icing sugar
Fill jam and sandwich the cookies.
Serve and enjoy.
Notes
Make sure your ghee/butter is at room temperature.
Chilling the dough is essential to get the best cookies.
Preheat the oven before shaping the cookies.
Keep them a few inches apart in the baking tray.
Cool the cookies completely before sandwiching them with jam.
Keep them in airtight containers at room temperature.
