In a mixing bowl add flour and salt. Cut in cold butter and mix with fingers until it looks like bread crumbs. Add cold water one tablespoon at a time until the dough forms into a ball.
Wrap the dough in cling film and chill for half an hour in the refrigerator.
Dust the work surface with flour and roll the dough ball into a circle as per the size of your baking dish.
Grease the baking dish with butter and place the pie crust in the pie dish. Chill it again in the refrigerator while preparing to fill.
For filling
Preheat the oven at 200 degrees Celsius.
In a mixing bowl add condensed milk, pumpkin puree, cornflour, ginger, cinnamon, nutmeg, and cloves. Add salt and whisk until combined.
Spoon the filling in the pie crust and bake for 30 to 40 minutes or until golden and filling is set properly.
Cool and cut in wedges.
Serve with whipped cream, ice cream, or custard.
