I made this exactly as per the recipe and it turned out very good. Even my mother who is not a fan of these &#039;street stunt&#039; food was impressed.
Straying fro the recipe I also added some Imli water in true street vendor style. And I had made a spicy fired red chilli masala for an earlier dish that I used as a garnish for this one.
Tonight I am making this again and I am thinking about adding a bit of dhania powder to the spice mix. I have noticed that the masala of the street guys is bulkier and adds a certain texture too to the matar apart from the flavour.
An observation: I remember the kulchas of my childhood used to be round and flat, not very spongy and a bit sour in taste. Nowadays the kulchas available commercially are just like bread, in taste as well as texture.
