Masala Macaroni is pasta cooked in tomato onion paste along with vegetables and Indian spices. This is my way of cooking macaroni on those lazy weekends.
What is Masala Macaroni?
when the word masala comes in front of anything it brings out a feeling of spices and aromatic flavors, literally even make you drool sometimes.
So masala macaroni is basically nothing but any pasta cooked in the Indian way. When I say Indian way that means a simple household way of cooking pasta with Indian spices and aromatics.
Frankly speaking, it is the way I cook macaroni in my house with all the spices I use to make any regular curry or stir dry vegetables.
Basic Ingredients for Masala Macaroni:
The basic ingredients needed to make masala macaroni are below listed.
- Firstly Pasta- Any kind of pasta can be cooked this way but I strongly urge you to use the macaroni for wonderful texture and taste.
- Vegetables-There are plenty of vegetable options to use in the masala macaroni, my preference is peas, bell peppers, carrots, etc. If you would like to incorporate spinach, beans, broccoli or any other vegetable, you’re most welcome.
- Onion and Garlic-For making my curries and side vegetables, I use red onion but for this macaroni, the votes go to white or yellow onions to bring out that sweetness in the pasta.
- Tomato and Green chilli- Tomatoes are base of this pasta dish and you must use 2-3 big tomatoes and or canned tomatoes for the tangy flavor and bright color as well.
- Oil-Any kind of cooking oil is fine to use in this dish.
- Spices (The basic four turmerics, coriander, red chili, garam masala)-For any dish these are the basic spices I use, so definitely they’d go in the pasta to bring the desi flavors.
- Salt- Can’t do without it, right? Nowadays, I am using Himalayan pink salt in everything.
- Last but not least peppercorns-Don’t think about it and add generous amount of freshly crushed black peppercorn for strong peppery flavors.
How to serve Masala Macaroni?
Frankly speaking, you won’t need anything else to serve it but if you’d ask me all I can say is top with olives, jalapenos, and cheese.
Enjoy the masala macaroni with a cup of masala chai on a weekend for brunch and feel satisfied until dinnertime

Masala Macroni
Equipment
- Pan
- Pot
Ingredients
- 200 gm macroni pasta
- 1 onion, chopped
- 2-3 tomato, chopped
- 1 green chilli, chopped
- 1/2 cup green peas
- 1 cup bell peppers, chopped
Spices
- 1/2 teaspoon turmeric powder
- 1 teaspoon coriander powder
- 1/2 teaspoon red chilli powder
- salt to taste
- 1 teaspoon garam masala
- 2 tablespoon oil
- peppercorn to taste crushed
- few coriander leaves chopped(I didn’t had )
Instructions
- Cook macaroni as per package instructions.Drain and set aside.
- Heat oil in a pan and add chopped onions. Cook for a minute and then add green chilli,green peas abell peppers and tomatoes.
- Cook covered until tomatoes are done and peas are tender.Now add all the spices powder and salt.Mix well.
- Add cooked pasta ,stir and cook covered for 2 minutes.
- Remove from heat and serve hot sprinkled with peppercorn and chopped coriander.
Notes
- Cook macaroni until it’s properly done or else it may feel uncooked in the vegetables.
- For strong flavors use olive oil instead.
- You may add olives and jalapenos to enhance the flavors.
