We have crossed more than 15 states and reached Manipur in our Indian states food odyssey for BM#39.Manipuri cuisine is simple,organic and healthy .Most of the dishes uses spicy chilly pepper instead of garam masala and the staple food consist of rice , leafy vegetables and fish.The cuisine is seasonal and each season has its own special preparations.
After a lot of searching I found this recipe here and tried it immediately . I was a bit skeptical about the taste so tried it with very small proportion but this khichdi is not like our regular khichdi that we used to make , it had tasted a lot more delicious and finger licking.
My daughter liked it so much that I have cooked it several times since then . So let’s start the recipe . Yum
Ingredients:
1 cup Basmati Rice
1/3 cup Arhar Dal
2 tablespoon Peanuts
2 tablespoon Butter
2 tablespoon clarified butter
1 onion , chopped
1 teaspoon ginger, grated
1 teaspoon garlic , grated
1 teaspoon cumin seeds
2-3 red/green chilli
2 bay leaves
2 cardamom
2 cloves
1 teaspoon turmeric powder
Salt to taste
Water as required
Method:
Wash and drain dal and let it boil in 1 cup water in a pressure cooker .Add salt and turmeric powder and let it cook on simmer with out lid.
Meanwhile heat butter and ghee (keep a teaspoon of ghee aside ) in a pan, and add cumin seeds , bay leaves red/green chilli , cardamom and cloves.
Now add the onions and fry till golden brown .Add the ginger and garlic and sauté for a minute.
Pour it over the boiling dal and rice in pressure cooker and cover the lid. Let it cook for 2 whistles.
Heat remaining ghee in a pan and fry the Peanuts. When khichdi is done , open the lid and add the fried peanuts.
Serve warm with dollop of ghee.
Best served with Ootti a Manipuri veg delicacy.
