It is said that there is no typical cuisine of Delhi. This is so because there is no specific identity of the city. With time, people from different areas of India came and settled, making Delhi an assortment of sorts. Slowly and gradually, Delhi assumed some of the aspects of the identity of all the types of people living in it, making multiple identities for itself. As a result, even the traditional food of New Delhi has no distinctiveness. It comprises of South Indian food, Punjabi food, Gujarati food, Rajasthani food and so on. However, there are certain food items for which Delhi is quite famous.For example Chandni Chowk is famous for Parathe wali gali , Old Delhi for local cuisine like kebabs, Aloo ,Poori & halwa etc. and our very own New Delhi for chaat , gol gappas , sweets etc.(Source here.
I prepared Khasta Poori , Aloo sabzi and Halwa (view original here ) for the state . This is the most famous charm of Purani Delhi where it is named as Nagori Poori , aloo and halwa .It is a staple food for us , and even one can see this classic combo anywhere aroun a temple, market or even in local street Bhandaras. So let’s start the recipe .yum
Ingredients:
For Poori:
500 gm Semolina/Suzi
1/2 cup wheat flour
1/2 teaspoon carom seeds
Salt to taste
5 tablespoon clarified butter
Oil for Frying
Method:
Mix the semolina, flour, carom seeds and salt.
Rub in clarified butter and add enough water to make stiff dough.
Make small balls of the dough and roll small pooris.
Heat oil in a wok and fry the pooris till crisp and brown.
Serve hot with Aloo and halwa.
For Aloo Sabzi
Ingredients:
3 medium size Potatoes, Boiled & mashed
A pinch asafetida
2 whole red chilies
1 teaspoon Cumin seeds
1cup Yogurt
1teaspoon ginger ,grated
1 tomato , chopped
2 green chillies , chopped
1teaspoon Chili powder
1 teaspoon coriander powder
1/2 teaspoon turmeric powder
1 teaspoon dry mango powder
Salt to taste
Method:
Heat ghee in a pan, add cumin seeds and ginger and let it crackle.
Add chopped green chilli and tomato .Add the spices and salt and sauté till tomatoes at done.
Now add yogurt, water and mix.
Add mashed Potatoes and cook for 10-15 minutes.
Keep stirring in between to avoid curdling.
When it starts to thicken then add chopped fresh coriander.
For Halwa
Ingredients:
1cup Semolina
1/2 cup Clarified butter
1/2 cup sugar
2-3 Cardamom
1 tablespoon Raisin
10-12 Almonds, sliced
2 cup water
Method:
Heat a pan and roast the semolina with ghee for 10-15 minutes on a low flame, keep on stirring till it gets brown in color.
Boil water and sugar in a separate pan .
Add nuts, raisin and cardamom to roasted semolina mixture.
Add the hot sugar water to the semolina slowly and keep stirring it to avoid lumps.
Stir the whole mixture very well and let the Halwa cook for 5-6 minutes more.
Serve hot.
Serve hot Halwa with Nagori Poori & Aloo.

That is a wonderful combination. I do add yogurt to potato curry but never added it to mashed potato. Will try it.
