According to Wikipedia , A rusk is a hard, dry biscuit or a twice-baked bread. It is sometimes used as a baby teething food. In India it’s an all time favorite tea time snack , mostly popular in North India. One can find these mini crisps in each and every tea stall . I have tried these for the first time and my family loved them. Next time when someone crave for rusk , I know how to make them. So let’s start the recipe .yum

Ingredients:
1 cup All purpose flour
1/2cup Corn Flour
1/2 cup whole wheat flour
1/2 teaspoon Cardamom powder
1 teaspoon Baking soda
1 teaspoon Baking powder
1/4 teaspoon Salt
1-2 cup butter /Canola Oil
1/2 cup brown Sugar
1/4 cup tutti fruiti + I table spoon APF
Method:
Add the dried fruits to the dried flour mixture and mix well till they all are well coated. Keep aside.
Preheat the oven to 350F or at 180 degree.Sift all the dry ingredients (flour, baking soda, baking powder , salt and cardamom powder) in a clean bowl.
Add sugar and oil /butter whichever you have used. Add in the floured tutti fruit and knead a dough. Make a log of this dough and let it rest for 10 minutes.
Shape each portion into a log about 8-10 inches long. Apply oil in hands to handle the dough.
Bake the log for 20-25 minutes, until they are beginning to brown around the edges. Remove them from the oven and let it rest for at-least 20 minutes.
Lower the oven temperature to 325F.
Carefully transfer the cooled logs to a cutting surface, cut into slices.Bake the rusk once again for 20-25 minutes, until they are dry and crisp.
Remove them from the oven, cool completely . It can be stored in an air tight container.
Serve with tea.
Serve -15 pieces Baking time -40 minutes
Note :You may true place tutti Fruti with chocolate chips or any other dried fruit.
If dough seems massy to handle use oil in hands or dry flour.
While cutting the log in pieces , it may crumble so handle carefully .
