Eggless Blueberry Muffins

Blueberry Muffins

Blueberry muffins are the most common type of muffins, commonly eaten worldwide. Pair them with your favorite coffee or tea and you will get a tasty and delicious breakfast ready to be devoured.

These blueberry muffins are eggless and butter less and tastes heavenly. To make the muffins vegan, all you need to do is replace the milk with any non diary plant based milk and you will get the best vegan blueberry muffins ready to enjoy.

Ingredients Needed to make Blueberry Muffins

  • Blueberry: Fresh or frozen blueberries.
  • Plain flour: Plain flour or whole wheat flour can be used to make these muffins.
  • Milk: Whole full-fat milk to make them more rich and delicious. I f you are looking for vegan options, you can simply replace the dairy milk with any plant-based milk.
  • Olive oil: Olive oil or any other odorless oil of your choice.
  • Brown sugar: Adds a nice color and flavors in the muffins.
  • Raising Agents: Baking soda and baking powder to raise the muffins.
  • Vanilla extract: To add some nice flavors.

How to make Blueberry Muffins?

Step 1. Set oven and prepare blueberries– Preheat oven to 180 degrees. Line a 6 hole muffin case with paper molds. Wash and pat dry blueberries with a kitchen towel. Coat them in a tablespoon of flour and set aside.

Step 2. Make the batter– In a mixing bowl add oil and sugar. Beat until sugar is combined. add hot milk and vanilla extract. Stir again. Sift the flour, baking powder, and baking soda into the wet mixture. Mix until combined. Finally, gently fold in the flour-coated blueberries in the batter. Scoop 2 tablespoons of flour in each muffin hole.

Step 3. Bake the muffins- Bake in a preheated oven for about 15-20 minutes or until a skewer inserted in the center comes out clean. Cool on wire rack. Serve warm or cool.

Prop Tips

  • Make sure to coat the blueberries in flour or else they will sink at the bottom of the muffins.
  • Preheat the oven before putting the muffins in the oven.
  • Do not overmix the batter.
  • Bake the muffins until they are golden or a toothpick inserted in the center comes out clean.
