Traditional Jharkhand cuisine is equally vegetarian as well as non-vegetarian. These traditional dishes are not available at the restaurants as they have not been commercialised. However on a visit to a tribal village or a tribal wedding in a remote area one can get a chance to taste such exotic food. All preparation except the pickles and festive ones are low on oil and spices.
The famous recipes are Dal Bhaat , Chilka roti , Dhuska , Aloo Chop , Aloo Rasa . Puttu , Baasi Bhaat etc.
I forgot to make any recipe for Jharkand and scheduled Uttranchal recipe for the state . Luckily yesterday when I was checking the post Irealise my mistake and remove the schedule. Then today afternoon I cooked this authentic and delicious Dhuska and Aloo Rasa from here.So let’s start the recipe .yum
Ingredients:
For Dhuska
1 cup rice
1/2 cup chana dal
1/4 cup urad dal
salt tot taste
1 teaspoon cumin seeds
1 tablespoon oil
water as required
Method:
Wash and soak rice and dals together i enough water for overnight or for 3-4 hours.
Drain excess water and blend the rice and dal in food processor to make a fine paste.
Add salt and cumin seeds and mix well.
Heat 2 teaspoon oil in a non stick pan and pour a laddle full of batter on the pre heated pan and cook evenly from both sides.
Remove from pan and serve warm with aloo rasa.

For Aloo rasa
4 Potatoes , boiled and mashed
1 teaspoon garlic,grated
1 teaspoon ginger,grated
2 green chillies,chopped
1 tomato,chopped
few coriander leaves,chopped
2 red chillies,dried
1/2 teaspoon turmeric powder
1 teaspoon coriander powder
1 teaspoon garam masala
salt to taste
water as required
Method:
Heat oil in a wok , add cumin seeds . Now add garlic ,ginger and red chilly.
Stir and add tomatoes and chopped green chilly.
Cook till tomatoes are done , then add turmeric , coriander powder , garam masala ,salt and chilly powder.
Add mashed potatoes , 1 1/2 cups of water and cook till you get desired consistency.
Remove from heat and garnish with coriander leaves.
Enjoy!!
Serve hot with Dhuka.
Serve -4 Cooking time-30 minutes
