I still remember my childhood days when my mother used to give us wonderful dishes in lunchbox. At that time we don’t like many vegetables like Cabbage , Eggplant , Bottle gourd and coriander leaves . But these coriander leaves stuffed pooris /puffed bread were our favorite. I don’t know how it’s fragrance became so good and tasty in these pooris. We just loved it. And now when I prepare them for my daughter in lunchbox she also like them. So let’s start the recipe . Yum
Ingredients:
1 1/2 cup wheat flour
1 cup coriander leaves , chopped
1/2 cup onion , chopped
1 teaspoon ginger , grated
2 green chillies , chopped
1 teaspoon cumin seeds
Spices:
1 teaspoon turmeric powder
1 teaspoon coriander powder
1 teaspoon garam masala
1 teaspoon red chilly powder
Salt to taste
1 tablespoon olive oil
Water as needed
Vegetable oil for frying
Method:
Heat olive oil in a an , add cumin seeds , as it started popping add grated ginger and sauté for 1 minute.
Add chopped chillies and onions and sauté for 2 minutes.
Now add all spices and salt , mix well.
Add chopped coriander leaves , cook or 5 minutes and set aside.
Take wheat flour in a bowl , add coriander masala and knead a smooth dough by adding adequate amount of water. Cover the dough and let it rest for 10 minutes.
Make 8 small round balls from the dough. Apply some oil on flatboard and oil one ball into the size of Poori.
Het oil in a wok , place one Poori at a time and fry from both sides for 1 minute.
Remove from oil with the help of slotted spatula. Repeat the same with remaining balls.
Serve hot with pickle and potato curry.
Serve-2. Cooking time -20 minutes
Note: Drain fried pooris on paper towel.
