A very spicy and super delicious roasted garlic chutney which is perfect for dosa, upma, or even rice.

Ingredients

cup
garlic cloves

dried red chillies

coconut,
grated
salt to taste

tablespoon
tamarind pulp
To temper
1
teaspoon
mustard seeds
a pinch asefida
few curry leaves

tablespoon
oil
Instructions
Heat a tablespoon of oil in a pan and add garlic cloves. Roast until slightly golden. Remove from oil and set aside.
Into the same oil, roast dried red chillies and coconut for few minutes. Remove and set aside.
Blend the roasted garlic, red chillies along with salt, tamarind and some water until smooth.
To temper
Heat the remaining tablespoon of oil and add mustard seeds, curry leaves and asafetida.
Stir and pour it over the chutney.
Store in air tight jars in the refrigerator. Serve and enjoy.
Notes
Adjust red chillies as per your taste.
You may store the chutney in the freezer for a month or so.
