A creamy, tangy and delicious American style cold potato salad that would make a nice and filling midday meal.

  • 1 lb rooster potatoes,
  • 1 small red onion, chopped
  • 1 celery stalk, finely chopped
  • 1/2 cup red bell pepper, chopped
  • 1 tablespoon apple cider vinegar
  • salt to taste
  • 1/2 cup egg-free mayonnaise
  • 1/2 teaspoon dijon mustard
  1. Wash and peel potatoes and slice into small cubes. Fill a saucepan with water and add potatoes to it.

  2. Bring it to boil and add salt, cook, until potatoes are tender. Drain the water and add vinegar to the potatoes.

  3. In a mixing bowl add the potatoes mayonnaise and the remaining ingredients for dressing. Mix well gently toss and serve cold.

  4. Serve immediately or chill in refrigerator before serving.
