Grilled Aubergine Tabbouleh

Grilled Aubergine Tabbouleh: A healthy, flavorful and filling couscous tabbouleh topped with crispy grilled aubergine. Time is flying so fast and here we are about to the end of the year. November makes me feel so lazy and cold, I kind of like to just lazing around in my blankie with a cup of ginger chai and watching my favourite show Gilmore Girls on Netflix.

This week I will be posting recipes cooking for one and mostly those that I like to make when I am alone in the home. Couscous is so easy to cook with and you can do so many things with it. Recently it has become my comfort food. Lo likes it with a plain tempering of ghee and cumin seeds. So after feeding her I love making these kinds of comfort food which are ready in few minutes for me. This particular recipe is from BBC Food Magazine and is really amazing bursting with nice flavours and texture. Not to mention filling and healthy too.
