For the third day of BM#47 last week , I made Berliner that is a traditional North German pastry similar to a doughnut with no central hole, made from sweet yeast dough fried in fat or oil, with a marmalade or jam filling and usually icing, powdered sugar on top.They are sometimes made with chocolate, champagne, custard, or filling, or with no filling at all.

3/4 cup buttermilk
1/2 cup milk
1/2 cup granulated sugar
100 gm butter
1 teaspoon salt
1 teaspoon vanilla extract
1 teaspoon dry active or instant yeast
3 cups all-purpose flour
1 cup granulated sugar
1/2 teaspoon ground cinnamon
1 cup jelly or jam of your choice
Combine yeast with warm water in a bowl and let it rest for 5 minutes.
Add all the other ingredients and mix well wit spoon or by hand. Make a soft dough and cover it with towel to rise for 2 hours.
When dough is raised well turn it in a floured surface and roll it into a 1 inch thick circle. Cut 12 small rounds of 3 to 4 inch with a cookie cutter or glass.
Heat oil in a pan and fry the donuts until golden from both sides.Drain on paper towel .
Mix sugar with cinnamon powder and roll the doughnuts in it.Fill the jam in piping bag and insert the jam inside until it is heavy.
Serve-12 pieces. Cooking time-20 to 30 minutes
