Nanaimo bar is a bar cookie of Canadian origin popular across North America, named after the west coast city of Nanaimo, British Columbia. It consists of a wafer crumb-based layer topped by a layer of light vanilla or custard flavored butter icing which is covered with melted chocolate.
Though I couldn’t get the perfect three layers but I have never tasted anything like it before. The original recipe contains walnut, I gave it a twist by using almonds, cashews and raisins.For alphabet”N” ,this would be my entry in the ABC cooking series of BM #32 under International /fusion theme. So let’s start the recipe . Yum
5 tablespoon Cocoa powder
1/2 cup butter
1/4 cup White sugar
2 cup graham crackers crust
1 cup shredded coconut
1 cup walnuts
or (1/4 cup almonds,chopped
1/4 cup cashew nuts,chopped
1 tablespoon raisins)
1/4 cup butter
3 tablespoon milk
2 cup icing sugar
1 teaspoon vanilla extract
2 tablespoon custard powder
Semi sweet chocolate
1 tablespoon butter
Mix 1/2 cup butter , white sugar, cocoa, in a heavy sauce pan or double boiler. Stir over low heat until mixture is of custard like consistency.Set aside.
Combine graham crackers, coconut , almonds , cashewnuts , raisins in a bowl. Add the melted mixture in it .
Mix well and pack into buttered 9 inch square cake pan.
Cream 1/4 cup butter, icing sugar sugar, , vanilla extract , vanilla custard powder and milk. Beat until creamy and spread over melted base.
Refrigerate till hardened.
Melt semi-sweet chocolate with 1 tablespoon butter and drizzle over custard icing. Refrigerate. When totally hard cut into square bars.
Serve chilled and enjoy.
Serve – about 25 squares. Cooking time -30 minutes
