Punjabi Aloo Beans (Potato & Green Beans Stir Fry )
Green beans or French beans are low in calories and rich source of dietry fibers , Vitamin B , and Vitamin A. In addition , green beans also contains minerals like Iron , Calcium , Magnesium etc.
I love to add beans in most of my dishes and from all of them, this Potato Beans dry curry is my all time favorite . Everyone in the family liked it with hot Chapati and some plain yoghurt. Today I am sharing recipe of this simple yet delicious stir fry. So let’s start the recipe .yum
Beans with potato
250 gm French /Green beans , chopped
3 potatoes , cubed or cut lengthwise
2 tomatoes , chopped
4-5 garlic cloves , chopped
2 teaspoon ginger, grated
4 green chillies , chopped
1 pinch asefetida
1 teaspoon cumin seeds
1 teaspoon coriander powder
1 teaspoon garam masala
1/2 teaspoon turmeric powder
1/2 teaspoon red chili powder
Salt o taste
Vegetable oil for frying
Heat oil in a wok , fry the potato cubes till golden from both sides. Drain on paper towel and set aside.
Remove all the oil from wok remaining around 3 tablespoon , add asefetida and cumin seeds. Sauté for a minute. Add ginger and garlic , stir for 2 minutes.
Add all spices and salt followed by chopped tomatoes and chillies . Mix well and cook for 2 minutes.
Add chopped beans , stir and cook for 7-10 minutes on low heat with frequent stirring. Do not add any water.
Add fried potatoes , mix well. Cook for 2 minutes more.
Remove from heat and serve hot with Chapati.
Serve with chapati
Serve-4. Cooking time -25 minutes
Note: You may avoid frying the potatoes, instead just add them with beans and cook till tender.
