Sweet Mango Pickle
Mango season !! I love mangoes in both forms -the raw one and of course ripe one and like to prepare pickles , chutneys, panna and shakes from it. This pickle is so addictive that you can’t stop yourself to grab it every time you see it. I used to prepare it with 2 kg mangoes and it’s finished in 6-7 days. So let’s start the recipe. Yum
1/2 kg Raw mango
1/4 cup fennel seeds , ground
1 teaspoon turmeric powder
2 teaspoon Red chilly powder
2 teaspoon salt
1 cup Jaggery/sugar , ground
Wash and peel mango and slice into thin pieces of equal size.
Take a big bowl and place these mango slices in it. Add fennel seeds, salt , red chilly powder.
Add Jaggery or sugar whichever you want over it. Mix it well and leave it covered for 6-8 hours or overnight.
Next day keep it on low flame and cook for 25 to 30 minutes till all water from Jaggery/sugar evaporates and it forms a thick consistency.Frequent stirring is required.
Cool it and store in airtight container .
Serve with main course.
Serve-6. Cooking time -30 minutes
Note: It can be stored in airtight for 1 month in refrigerator and used further.
Try to use raw mangoes.
