Mango Phirni

Mango Phirni!! A wonderful desert to relish after meals. Mango Phirni is a traditional rice pudding made up of rice , milk , cardamom and saffron with mango . It’s perfect treat to surprise your guests. So let’s start the recipe .yum

Mango Phirni


1 liter full cream milk
1/2 cup Basmati rice
1 cup sugar
1 cup Mango pulp /purée
Few saffron strands
2 cardamom
1/4 cup chopped almonds
2 teaspoon raisins
Wash and soak basmati rice in 1 cup water for 1- hour. After that make a coarse paste of it.

Soak saffron strands in 2 tablespoon of warm milk.
Wash and peel the mango .Make purée of mango in blender.
Heat milk in an open mouthed vessel .
As it started boiling add rice paste in it. Keep the flame low and start stirring it continuously. Do this process till rice granules are done.
As soon as rice are cooked , add sugar in it. Stir again for 5 minutes.
Now add chopped nuts (keep few for garnishing ) and saffron milk. Mix well and stir again on low heat.
At last add mango purée and mix all the ingredients together. Cook for 2 minutes.
Remove from heat , cool it and garnish with chopped almonds , raisins and saffron strands.
Serve chilled or warm.

Serve-4. Cooking time -30 to 35 minutes.
Note: You may add condensed milk if desired . But I get the perfect consistency without it.
Add sugar as per your taste.
Before making pulp of mango just make sure it’s sweet , if sour it will spoil the whole phirni.
You may use any type of mango like Alphonso , Dashari or Chaunsa. Here I have used the later one.
