Lauki /Bottle gourd with Chana Dal ( Ghiya Chane ki Dal )
A simple and healthy preparation which has taste of dal and vegetable in one dish. It’s so lite and tasty that it can be enjoyed as lunch or dinner as well. So let’s start the recipe .yum
1 small bottle gourd , cut in cubes
1 cup split Bengal gram/chana dal
5 cloves garlic, chopped
2 tomatoes , chopped
4 green chillies , chopped
2 teaspoon ginger , grated
1/2 pinch Asafetida
1 teaspoon cumin seeds
2 teaspoon coriander powder
1 teaspoon turmeric powder
1 teaspoon red chilly powder
1 teaspoon garam masala
Salt to taste
4 tablespoon clarified butter/ghee
Water as required
1/2 cup coriander leaves , chopped
Wash chana dal and cook it with bottle gourd , a pinch of salt and turmeric powder in 1 glass water for 2 whistles.
Heat clarified butter in a pan/wok , add asefetida and cumin seeds. Sauté for 1/2 minute and add chopped garlic and ginger. Stir for 1 minute.
Add all spices and salt , mix well. Keep low flame.
Add chopped tomatoes and green chilly. Cook till ghee comes out from edges.
Add this tempering over cooked dal and bottle gourd.
Now cook it further on low heat for 10-15 minutes. Remove from heat and add chopped coriander leaves.
Serve hot with Chapati or Paratha.
Serve-3. Cooking time -30-35 minutes
