Cham Cham (Bengali Sweet )
Cham Cham or Chum Chum is a traditional sweet from West Bengal and is very popular in Bangladesh , India and Pakistan . It is usually made with Chenna (a scrambled Milk or Paneer preparation ) and available in variety of colors. The stuffing is made up of dried milk (Khoya ) or Dry fruits and nuts . I have tried it for the first time and everyone liked it. This goes for white color for cooking with colors theme. So let’s start the recipe .yum
1 liter full cream milk
1 teaspoon vinegar/lime juice
2 cup sugar
4 cup water
2 tablespoon corn flour
1 cup chopped nuts (almonds , cashews , walnuts , raisins etc)
1 tablespoon almonds , sliced
1/4 cup coconut , dessicated
1/2 cup pitted dates
2-3 green cardamom
Boil milk in a pan . Let it cool a little and then add vinegar and stir it . When all milk scrambled , remove from heat. Wash it under running water and set aside.Its called Chenna.
Add corn flour in the Chenna we prepared . Mix it till smooth.Make 8 round balls from it . Give them oval shape and set aside.Boil 4 cup water in a pan or pressure cooker . Add 2 cup sugar and boil for 2 minutes.Place the Cham Cham in it and cook for 15-20 minutes in pan or 1 whistle in pressure cooker. Let it in the sugar syrup for 1 hour or till it cooled.
Dry roast the nuts in a pan , add dessicated coconut and cook for 1 minute.Cool it and add cardamoms and pitted dates. Grind this mixture and set side.
Take out the Cham Cham from syrup . Make a slit in the center and fill a tablespoon full of stuffing in it . Repeat the process for rest .
Garnish with chopped almonds .
Serve chilled .
Serve-4. Prep time-1 hour
Note : Mix corn flour gently and firmly in Chenna .
