Lauki /Ghiya Raita (Bottle gourd Raita )
Summers is at its peak !! Everyone is affected from scorching heat and trying to get rid of it by cold drinks , shakes , smoothies etc. I also prefer to make something or add such ingredient in my menu for lunch or dinner and one of these ingredient is bottle gourd. As a member of Cucurbitaceae family it act as summer cooler and when mixed with yoghurt it becomes a perfect chilled preparation to beat summers. It’s always my moms’s favorite and i have learnt it from her. So let’s start the recipe . Yum
1 cup bottle gourd/Lauki /Ghiya , grated
3 cup yoghurt /curd
1 teaspoon mint leaves dried/fresh
1 teaspoon cumin seeds , roasted
1 teaspoon red chilly flakes
Black salt to taste
Beat yoghurt in a bowl and set aside.
Boil the grated bottle gourd in 1 cup water. Squeeze excess water and set aside.
In a bowl mix boiled bottle gourd with yoghurt. Stir gently.
Add dried /fresh mint leaves and roasted cumin seeds.
Season with salt and red chilly flakes.
Serve chilled with main course.
Serve-4. prep time -10 minutes
Note : Beat the yoghurt completely or else it will split in Raita.
