Gujiya

Well, Holi festival is near and everyone enjoys this festival with colours and sweets. One of the most popular delicacies is Gujia, a sweet dumpling made up of Maida flour stuffed with Khoya and then fried in Ghee. A very traditional sweet of India often Gifted as blessings from mothers to their married daughter as a blessing. So one can imagine what importance and aesthetic value this sweet carry. A very crunchy texture with sweet & soft khoya filling and nuts makes every single bite of it a heavenly experience. Be ready for a sweet & yummy journey. So let’s start the recipe. Yum.

Gujia

Ingredients:
For dough
All purpose flour-200 gms
Vegetable oil-1 tsp
Water-1 cup

For stuffing
Semolina-1/2 cup
Khoya (dried milk)-1/2 cup
Dried nuts (almonds,cashew nuts,raisins,melon seeds)-1/2 cup
Sugar powder-1.5 cup
Clarified butter-1/2 cup

Vegetable oil or clarified butter- for frying (for best result use clarified butter)
Dry flour-1/2 cup

Method:
Take all ingredients for dough in a bowl and knead a smooth dough.

Heat clarified butter in a wok or pan  ,add semolina and roast it for 5 minutes.Take it out from wok.

Add chopped nuts and roast them for 5 minutes and take them out.

In the same wok add khoya and roast it.

In a bowl take all these fried ingredients ,mix with sugar powder and keep aside.

Make 15 to 20 balls from the dough.Take one ball on flat board and dust it with dry flour.

Roll it slightly to the size of Puri and put it on gujia maker.

Place  a heap of stuffing on one side and press it vigorously. Likewise, make all the gujias.

Heat ghee or oil fir frying in a wok,add 4 to 5 gujia at a time.
Fry from both sides for 10 minutes on low heat till a thick crust formed and color becomes golden. Repeat the same with all.

Drain on paper towel , cool and store in air tight container.
Enjoy with milk or tea.

Serve-15 to 20 piece. Cooking time-45 minutes
